NUTR 564 - Cardiovascular Nutrition 3 Credits Examination of epidemiology, physiology, mechanism, treatment and prevention of cardiovascular disease with an emphasis on the role of nutrition, including dietary cholesterol, saturated fatty acids, trans fatty acids, fish oils, fiber, sodium, various popular diets, antioxidants, wine and soy. Students will learn through interpretation and evaluation of current research articles, presentation and discussion of topics with fellow students, and development of an original hypothesis and study proposal to further our knowledge of the field.
