NUTR 533 - Nutrition and Aging 3 Credits An in-depth study of the physiological, social, and environmental factors that affect the nutritional status of older adults. Topics include methods of assessing dietary intake, anthropometric measurements, alterations in physiologic mechanisms, and subsequent changes in nutrient requirements in the aging process, nutritional care in extended care facilities, and resources available in the community. Other: Availability for real-time teleconferences required (approximately 7-9 p.m. E.S.T. weekdays).
